ARM64 architecture?

How do we know that macOS Catalina had internal builds compiled in the ARM64 architecture? Who said any of those builds aren't just early builds of Big Sur? Also, if Catalina builds were compiled for ARM, I think builds of OS X Yosemite could have as well, since I've heard Apple had tried using the A8 or A8X SoCs in the 2015 Retina MacBook when it was being prototyped in 2014.
